Monday, December 15, Solstice is supporting longtime friend and local hero Laura Knight, owner of Pascucci, by inviting our community to dine out with friends. The beloved State Street restaurant is closing its doors in February 2026 after 32 years.
Laura has been a dedicated supporter of Solstice including serving on the Board of Directors for 25 years. Her partnership with Solstice began in 2000 with the launch of Celebrity Dine Outs for Solstice, which quickly became a signature fundraiser. This was a night when Solstice staff and volunteers donned themed costumes, waited and bussed tables. Performers from La Bohème and other Solstice artists added live entertainment, and on many of these spirited evenings, DJ Darla Bea energized the crowd.
The Dine Out events evolved into an annual tradition that engaged community members, local leaders, and arts supporters in lighthearted Solstice-style revelry. In an extraordinary gesture of generosity, Laura donated 100 percent of the proceeds from these evenings — including food sales, drinks, and tips — directly to Solstice.
Pascucci also hosted numerous Celebrity Bartender Nights, drawing local personalities such as John Palminteri, Mike Jordan, City Council members, the Mayor, and notable business figures. One memorable year, former Mayor Helene Schneider donned a costume as the “Tequila Girl” to serve shots. These Dine Outs ranked among Solstice’s most successful and fun community fundraisers.
